MUSHROOM GALOUTI KEBAB
Ok friends! This is it! Finally revealing my STAR recipe after much insistence from all of you. I am glad you loved it and I am sure your families are going to be drooling over it too! Happy Cooking!
3-4 tsp ghee
25 gm ginger, chopped
1 1/2 tsp green chillies, chopped
1/2 tsp turmeric powder
1 tsp red chilli powder
75gm cottage cheese (paneer)
200 gm mushroom (1 packet), blanched
50 gm potatoes, boiled
50 gm onion, browned (pre cooked)
2 tsp coriander leaves, chopped
salt to taste
1/2 tsp garam masala powder
1 tbsp olive oil
1 tbsp cornflour
1-2 tbsp besan
Heat ghee, add onions and saute till brown. Keep aside. Add ginger and green chillies and saute for 1 minute. Add haldi, red chilli powder, cottage cheese, blanched mushrooms and boiled potatoes and saute again. Now add browned onions, coriander leaves, salt and garam masala powder. Cook well and leave it aside to cool. Mince the mixture by grinding it in a mixer or in motar and pestle to form a batter for the tikki. Add cornflour and besan to this mixture to achieve an adequate consistency.
Place the mixture in a deep glass bowl and in the centre of the mixture put a smaller bowl with a piece of live charcoal. Pour ghee over the charcoal and smoke for 5-10 minutes, with the mixture tightly covered.
Heat olive oil in a pan. Shape the mixture into flat roundels and cook till the tikkis are golden brown.
Serve to your family and friends with onion rings, green chutney, schezwan sauce and love!
